# Asparagus, Potato & Speck Frittata

A light one-pan frittata built around the asparagus that must be used **now**
(bb today). Eggs are the modest protein; a little speck adds a savoury, cured
note without turning it into a meat pile. Serves 2 as a main with bread, or 3–4
as a lighter plate.

## Equipment

Boat adaptation: the gas oven is underheat-only and hard to regulate, so this
frittata is **finished covered on the hob over low heat** rather than under a
grill/broiler. A lid (or a plate/foil) over the pan sets the top by trapping
heat. No oven needed.

## Instructions

1. **Potatoes first.** Scrub ~300g potatoes, cut into ~1.5 cm dice, and boil in
   salted water until just tender (~10–12 min). Drain well. *(Skip if you have
   boiled potatoes already.)*
2. **Prep while potatoes boil.** Snap the woody ends off ~250g asparagus and cut
   into ~3 cm lengths, keeping tips separate. Dice ~60g speck. Finely chop ½
   onion (~60g) and a small handful of parsley. Crack 6 eggs into a bowl,
   season with salt and pepper, beat well (whisk in the optional grated cheese
   now).
3. **Render the speck.** Melt a knob of butter in a ~24 cm non-stick pan over
   medium heat. Add the diced speck and fry 2–3 min until it starts to crisp and
   release its fat.
4. **Soften the aromatics.** Add the chopped ½ onion; cook 3–4 min until
   translucent. Add the asparagus *stalks* (not the tips yet) and the drained
   potatoes; fry 4–5 min, turning, so the potatoes pick up a little colour.
5. **Add the tips.** Stir in the asparagus tips and half the parsley; cook
   1–2 min — the tips should stay bright and have a little bite.
6. **Pour and set.** Spread everything evenly, turn the heat to **low**, and
   pour the 6 beaten eggs over. Cook gently, undisturbed, 8–10 min until the
   edges are set and only the centre is loose.
7. **Finish covered.** Put a lid (or plate/foil) on the pan and cook another
   3–5 min on low until the top is just set. Don't rush it on high — low and
   covered avoids a rubbery, scorched base.
8. **Rest & serve.** Slide onto a board, rest 2 min, scatter the rest of the
   parsley, and serve in wedges with seeded bread and a squeeze of lemon.

## Variations

> **Note:** A classic frittata is oven-finished; here it's hob-finished under a
> lid to suit the boat's underheat-only oven. If you'd rather, the gas oven on
> low underheat with the lid off also works to set the top — just watch it, as
> it's hard to regulate.

> **Note:** No cheese is in stock, so it's left optional. Feta or any grated
> hard cheese both work well with asparagus if you pick some up.
